No-Bake Peanut Butter Chocolate Oat Bites

No-Bake Peanut Butter Chocolate Oat Bites

Some days call for dessert without turning on the oven. These peanut butter oat bites come together in one bowl, and a short chill helps them hold their shape. The recipe makes about 12 bites, depending on how generous your scoop is.

Mix the Pantry Ingredients

Measure 1 cup old-fashioned rolled oats, ½ cup creamy peanut butter, ⅓ cup honey, ¼ cup mini chocolate chips, 1 tablespoon ground flaxseed if you have it, and a small pinch of salt. Stir the peanut butter and honey together first, then fold in the oats, chocolate chips, flaxseed, and salt. If the mixture seems too sticky to shape, stir in another tablespoon of oats.

Shape and Chill

Scoop the mixture by the tablespoon and roll each portion between your palms into a bite-sized ball. Set them on a plate or small tray lined with parchment, leaving a little space between each one. Refrigerate for at least 20 minutes, until firm enough to pick up without sticking.

Make Them Your Own

Store the bites in a covered container in the refrigerator, where they’ll stay firm and ready to grab. For a less sweet batch, start with ¼ cup honey and add more only if the mixture won’t hold together. Print or save the measurements before you start; once the bowl is mixed, shaping the bites goes quickly.
